Food-and-wine connoisseurship
The Apulian gastronomy comprises of extra-virgin olive oil, bread, cheese, fresh fish and vegetables, skillfully combined in typical dishes like orecchiette and fish soup.
Apulian extra-virgin olive oil has a mild taste, fruity and slightly spicy; among the cheeses we mention canestrato, burrata and caciocavallo; among the sausages we mention soppressata (brawn) and capocollo. Among the various types of fish and shellfish are: mussels, ink-fishes, octopuses and sea urchins.
Among the typical dishes, besides the renowned “orecchiette alla pugliese” and the classical fish soup, are anchovies "arracanate", Gargano chop, cardoncelli mushrooms, orange and lemon salads. Gargano also offers a wide range of DOC wines among which are "Orta Nova" and "Moscato di Trani".
